First entry in forever and it's a recipe for something I made tonight (without a recipe) and I'll forget it otherwise.
4 tbsp butter
2 cups rice
4 cups chicken stock
1 tin drained white tuna
1. Melt 3 tbsp butter.
2. Finely dice shallots, brown.
3. Dice mushrooms, add.
4. Add rice, stir to coat.
5. Add stock to cover rice. Stir so it doesn't stick. Keep adding a little bit more stock as it cooks, but not so much that you end up with it not absorbing.
6. When rice is cooked, add juice of half lemon and the rest of the butter. Stir through so that the butter melts.
7. Add tin of tuna and stir through.
